新鮮檸檬葉(Kaffir lime leaves) 數片
南薑(galangal) 2小段切小塊
紅蔥頭(shallot) 1個切薄片
香茅(lemongrass) 1根斜切成數小段
香菜(cilantro) 1小把
紅辣椒(Chilli) 2根
水或高湯(Soup) 2杯
魚露(fish sauce) 2 湯匙
椰奶(coconut milk) 165 ml
椰子糖(palm sugar) 1湯匙
雞胸肉(Chicken Breast 2片切片
蘑菇(Mushroom) 5個切片
小蕃茄(Little Tomato) 10顆
九層塔(basil) 數片
酸柑(lime) 1顆擠汁
1. 將一半的椰奶倒入鍋中, 用中小火將椰奶煮出香味後, 加入南薑, 紅蔥頭, 香茅炒香
2. 加入雞肉繼續拌炒一下, 加入水或高湯, 紅辣椒, 蘑菇, 椰糖, 檸檬葉, 魚露, 用中火煮約15分鐘
3. 加入檸檬葉, 再依個人喜好調味, 起鍋前加入香菜及九層塔即可
1. Pour coconut milk into the pot, use small heat to cook until the coconut smell came out
2. Add galangal, shallot, and lemongrass. Fried them.
3. Add chicken and continue fried.
4. Add soup, chilli, mushroom, sugar, kaffier lime leaves, fish sauce, and use medium heat to cook about 15 minutes
5. Add in lime leaves, an cilantro or basil before taking out from the pot, based on your own preference.
